Fresh Corn, Tomato & Basil Saute

Gather in-season corn, tomatoes, and fresh basil at your local farmers market to make this simply delicious side dish.

FRESH CORN, TOMATO & BASIL SAUTE

Serves 4

5 ears fresh yellow corn

2 tablespoons unsalted butter

½ pint grape tomatoes, cut in half

1/4 teaspoon kosher salt or to taste

5 fresh basil leaves, thinly sliced

  • Remove the husks and silk from the corn.
  • Holding the corn cob straight up in a bowl, slice the corn kernels from the cob with a sharp knife, letting the kernels and the juice from the corn fall into the bowl. I like to use a serrated knife to make quick work of this.
  • Melt the butter in a large skillet over medium heat and add the corn kernels. Saute the corn, stirring frequently, for about 5 minutes. Stir in tomatoes, and continue to cook for 5 more minutes until tomatoes soften and corn is crisp-tender. Stir in the salt and basil.
